ASHBURN, VA — Several facilities in the Ashburn area recorded violations during health department inspections between Nov. 7 and Nov. 14.
COVID-19 restrictions around the state have disappeared, so health inspectors conduct most restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.
Here are the most recent restaurant inspections in the Ashburn area, according to the Loudoun County Health Department.

- Raw Parmesan crusted chicken was observed stored over a container of dumplings in the walk-in cooler. Foods shall be protected from sources of contamination by separating raw animal proteins from ready to eat (RTE) foods. Person in charge moved the raw chicken to an area designated for raw chicken products.
- A spray bottle containing a blue liquid with no label was observed behind the full bar. When toxic materials (Cleaners) are taken from bulk supplies, the common name of the material must be labeled on the working container. PIC removed the spray bottle.

- Several buckets of food product (sauces, dry ingredients) improperly stored on the ground of the facility.
- Facility is using a black trash bag to line the interior of the rice machine to prevent the rice from sticking to the container. There is a sushi rice net containing the rice within the rice cooker. Trash bags are not suitable for direct food contact.

- Lower section of the low boy refrigerator holding TCS food items is not maintaining time/temperature control for safety (TCS) foods at 41°F or below.
- Time/temperature control for safety (TCS) foods must be held at 41°F or below in that a container of whole milk and half and half registered at 54°F on front low boy refrigerator. As per the person in charge (PIC) said container of milk and half and half had been placed on the counter for over 2 hours and then placed in said unit.
- At least one handwashing sink, or the number of handwashing sinks necessary for their convenient use by employees in area of food prep in that the handwashing sink in front food prep area observed voluntarily closed working and not in use. As per the PIC the pipes under said sink is leaking hence it said sink is not used.

- Hand washing facility observed without soap in rear food prep area. As per the person in charge (PIC), the facility is out of soap and has placed an order.
- The handwashing sink located in front sandwich prep area is not maintained in good repair. As per the PIC, the pipes behind the walls were leaking and hence the water to said hand sink has been voluntarily shut off till it is repaired.
- Meatballs in marinara sauce not heated adequately prior to placing them in the hot holding table. Said food registered at 104°F in hot holding table in front food prep area.
- Several live fruitflies observed in the rear food prep facility.
- Floor observed with broken tiles hence some water accumulating in said area.

- Observed no hand soap at hand sink in kitchen. Food employees should have access to hand soap at all times.
- Observed improper cold holding temperatures goat cheese 44F, blue cheese 44F, parmesan 45F drawer cooler; sliced tomatoes 55F, fresh mozzarella 56F line prep cooler; pasta salad 48F back prep cooler.
- Observed improper cooling methods of cooked chicken in small plastic bags tightly placed together in a metal contained.
- Observed cutting board at back prep cooler with heavy scaring not making it easily cleanable.
- Observed line prep cooler improperly cold holding time/temperature controlled for safety foods. Equipment should be maintained in good repair.
- Observed no quaternary test strips and person in charge provided pH test strip. The facility should have quaternary test strips at facility.
- Observed a black residue on the wall of ice machine. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

- There are no paper towels at the hand sink to dry hands. There must be paper towels available at hand sink for proper hand drying at all times.
- Observed raw ground chicken stored over raw beef in cooler. Prevent potential cross contamination by not storing raw animal food with a higher cooking temperature (165) above raw animal food with lower cooking temperature (145).
- Onion chopper observed with accumulation of dried food residues.
- Observed time/temperature control for safety foods (TCS) not properly dated for disposition. Foods not labeled include: chickpeas and spinach. Ready to eat TCS foods held over 24 hours must be date marked with either made on date or date the food item must be consumed not to exceed 7 days.
- Observed the following food thawing using an improper method: frozen raw meat store in a bucket of hot water.

- The certificate for the certified food protection manager has expired (8/08/2023). A certified food protection manager must have a valid certificate. Renew this certificate as soon as possible.
- The pump that provides water to the handwashing sink and the three basin sink is not working. No running water within the truck. Hands are washed with hot and cold water that are stored on the truck. 3 basins are set up with this same method. Handwashing sinks shall be equipped to provide water of at least 110F through a mixing valve or combination faucet. Person in charge (PIC) has the replacement pump (shown to the EHS during the inspection) and will have it installed shortly. A flow-up inspection will be conducted to ensure that this pump is replaced.
- An in use sanitizing bucket with wiping cloth was observed stored on the floor of the mobile unit. Sanitizing buckets used to store wet wiping cloths must not be stored on the floor. Store these buckets on shelves or counter tops.
- EHS observed a wooden spoon with moderate/severe wear. Surface was scratched with a “fuzzy” texture. This utensil is no longer able to be correctly sanitized. Food contact surfaces of utensils must be free of chips, cracks, breaks or other imperfections that may impede their complete sanitization. Person in charge voluntarily discarded the wooden spoon and replaced it with a brand new one.

- The single hand sink in the kitchen, located to the left of the cooking line was observed with a bucket of used utensils stored within the basin, blocking access. Hand sinks shall be used for no other purpose than washing hands. They should remain free of obstacles that impede employees from frequent hand washing. Person in charge (PIC) removed the container so that the sink is easily accessible.
- A container of cooked chicken wings was observed with no date marking. When keeping time/temperature control for safety foods (TCS) longer than 24 hours, the date that the food was prepared/opened or a discard date not to exceed 7 days from the date that the food was prepared/opened must be labeled on the food/container. PIC labeled the container of chicken wings.
- Tempura chicken was observed actively cooling while covered With plastic wrap in the walks-in cooler. When actively cooling foods, they must be left uncovered so that adequate heat transfer for rapid cooling may be achieved. EHS directed that cooling items must not be covered until they have completed the cooling process. PIC uncovered the tempura chicken.
- A container of Tofu and a large box of shell eggs were observed stored directly on the floor of the walk-in cooler. Food shall be protected from cross contamination by storing it no less than 6″ inches off the floor. Move these foods off the floor.
